Chocolate Cupcakes with EveryMite

Cupcake: - 200g fresh dates, soaked in boiling water - 2 tbsp maple syrup - 2 tbsp extra virgin olive oil - 100g avocado - 2 eggs - 1 tsp vanilla extract - 225g self-raising flour (or use gluten-free flour) - 50g cacao powder - 1/2 cup milk of your choice Avocado frosting: - 100g avocado - 25g cacao powder - 2 tbsp maple syrup - 1 tsp vanilla extract - 1 tsp Low Salt Everymite 1. Preheat oven to 180°C. Grease cupcake tins with some coconut oil. 2. Process date mixture, maple syrup, oil, avocado, eggs and vanilla in a food processor until the mixture is smooth. 3. Sift the flour, cacao powder and salt into a large bowl. Add the avocado mixture and milk. Add some more milk if the mixture is too thick! Fold until just combined. 4. Transfer to the prepared cupcake tins and smooth the surface of each. 5. Bake for 20 mins or until a skewer inserted in the centre of the cupcake comes out clean. 6. Set aside in the pan for 10 mins before turning onto a wire rack to cool completely. 7. To make the frosting, place the avocado, cacao powder, maple syrup, vanilla, EveryMite and salt in a food processor and process until combined and smooth. Spread over the top of the cake. 8. Top with chocolate covered chickpeas or nuts!
