VEGAN BACON EGG on SuperGreen Matcha BUN

Inspired by the classic Bacon & Egg Roll on your usual cafe’s menu, this veganised version is not missing a thing - still pack with plant protein & deliciousness ; served on a homemade, no-rise & fluffy bun boosted w/ Alfalfa & Matcha (for antioxidant goodness!!)

—— SuperGreen Matcha Bun: 3/4 cup self-rising flour, plus more for dusting and kneading as needed 1/2 cup coconut yogurt @pure_n_free , plus more dusting kneading Pistachio Dukkah @tableofplenty Optional: 1/2 tsp Matcha powder (I used Craftsman @mymatchakin ) + 1/2 tsp Alfalfa powder Combine bun ingredients together and knead until soft and elastic, add more flour if too sticky. Form a ball and bake at 180C for 20-25mins :) —— Egg: 3 tbsp Savoury Egg Mix @plantasyfoods @realgoodfoods + 2 tbsp silken tofu Bacon @madewithplants Spread: 2 tbsp Vegan Cream Cheese @madewithplants + 1 tsp @everymite Served with Sour Cream Cheese Puffs @cobspopcorn
